Conrad Dublin, one of the capital’s leading 5-star hotels, is delighted to welcome Gregory Brossard as he takes on the role of Director of Operations.
A French native, Gregory grew up in a small countryside town in the Cognac region and kicked off his career as Senior Waiter at the Michelin Star Le Cinq restaurant, located in the Four Seasons, France, where he instantly fell in love with the world of hospitality.
Extremely well-travelled and with a wealth of experience and professionalism to offer, he lived and worked in Saudi Arabia for two years, before moving to Japan to work across hotels in Kyoto and Niseko. It was in 2021 that Gregory began his career with Hilton, as Resort Manager at Conrad Bora Bora, before moving to Conrad’s Dublin location where he will now assume his new role.
Speaking of his recent appointment, Gregory enthused about his perpetual love for meeting new people, and his desire to experience new cultures and ways of living, saying: "My goal is to collaborate with the remarkable team here at Conrad Dublin to consistently exceed our guests' expectations. By combining my worldwide experience and passion for hospitality, I am excited to contribute to the hotel's ongoing success."
A local champion across hospitality, food and beverage, Conrad Dublin is proud to reopen its destination restaurant The Coburg. Boasting a menu of classic and innovative dishes using the best of Irish produce, as well as a monthly Supper Club for food lovers to dine solo or in groups and enjoy an expertly curated evening of food and ever-changing accompaniments. Open Wednesday - Sunday, The Coburg is the perfect choice for special meals and intimate gatherings.
