The Brehon Hotel & Spa, Killarney is excited to present the first instalment of The Brehon Chef Series: Brehon Meets Breton, on October 2nd, 2024. An exclusive culinary event featuring the remarkable talents of renowned chef Stephane Delourme and The Brehon’s own Chad Byrne. This extraordinary evening promises a gastronomic journey blending the finest of Irish and Breton culinary traditions, all for €65 per person.
Stephane Delourme, originally from Brittany, France, has a rich culinary background, including working at 2 Michelin-starred Sully D’Auteuil in Paris and 25 years with Rick Stein. Known for his passion for seafood and crafting dishes that honour the ingredients and cultures he encounters, Stephane’s culinary philosophy is one of creativity, discovery, and connection. As part of his Celtic Connections Tour, Stephane is exploring the deep cultural ties between Brittany and other Celtic regions, including Ireland.
Neil Grant, The Brehon’s General Manager, first met Stephane at the 2012 Taste of West Cork festival. This event celebrates the connection between Ireland and Brittany, highlighting the distinct styles and shared love of fresh, local ingredients. The evening will feature a selection of dishes inspired by the sea, land, and cultural heritage of both places, including some of Ireland’s finest seafood and Brittany’s rich culinary traditions.
Menu Highlights
The carefully designed menu for the evening is a testament to the shared values of both chefs—respect for local ingredients and a commitment to quality. Guests will enjoy a multi-course dining experience featuring:
- Kenmare crab beignets
- Wood-fired BBQ lobster with chili glaze
- Cromane oysters on ice with Cabernet Sauvignon vinegar and shallot dressing
- Wood-fired Union Hall slip sole brushed with vadouvan spices and lemon olive oil
- Organic vegetables from local Irish farms
- Breton butter cake with seasonal bramble berries and Chantilly cream
Additionally, guests will be welcomed with a complimentary drink, canapés, and a perfectly paired glass of wine from Domaine Laroche, known for its crisp, mineral-driven Chardonnay.
Chad Byrne, the Executive Chef at The Brehon for the past 13 years, is known for his creativity and dedication to working with top-tier local produce. His vision for The Brehon’s dining experiences complements Stephane’s seafood expertise, and together, they will offer guests a menu that reflects the harmony between tradition and innovation. “Working with Stephane is an exciting opportunity for me,” Chad says. “We share a passion for exploring the incredible flavours that can come from the sea and land, and this event will bring the best of both our worlds together.”
